My buffet party begins @ 2. When should i light the burners & then take the tops off for my guests to eat?

Please have your food cooked and hot before you place it in the chafing dishes. Have them set up with about an inch of water in the bottom at least a half an hour before serving though an hour is better. Chafing dishes will not cook your food or even reheat it. Take the lids off immediately before serving. Be sure to turn them upside down over the food as water condenses on the under side of the lid and you can burn yourself or get water on the floor. Those cans holding the fuel are adjustable for a reason. Delicate foods won’t need the same strong heat so try not to have the water boiling just simmering.
