For a buffet, how do I keep pasta hot without it overcooking or drying out?

We are having a buffet, we can’t afford to have it catered. We are having two different pasta’s with two different sauce’s. My problem is I don’t know how to keep the pasta warm. I thought of keeping it in hot water, but my worry is that it will overcook the pasta and make it mushy. My other worry is that if I don’t have it in water it will dry out and get cold. There has to be a way. Can anyone help?

Well your 2 bests bet go to a store and pick up some chaffing dishes and chaffing rack and sterno. cook the pasta aldente just a tad under cooked. toss in your sauces and put in the dishes. do small batches so they wont sit too long and get mushy. or you can maybe find a friend who would make each order have a pot of very hot water and some kind of hand held strainer that will fit in to the pot. the person would dunk the precooked pasta in the water and then add the sauce on top that would all so be kept warm same area.

Edit you would want to do a double boiler on the chaffing dish idea so the pasta not near the flame.
