An Analog-to-Digital Converter (ADC) converts analog signals into digital data. For instance, when you sing into a microphone but want to record it to a .wav or .mp3 file on your computer, the microphone creates an electrical signal corresponding to your voice. That signal will be oscillating with respect to the changes in your voice, but it will generally fall in some voltage range, like -50 to +50 millivolts. The ADC breaks up that signal into ranges, depending on the number of bits it has. An 8-bit ADC has 256 levels (2^8) and so that 100 millivolt range is broken up into 256 slices. The ADC senses the voltage level on the input and assigns it to one of those slices, and every millisecond or so it gets updated. The slices are represented by 8 bits (or one byte) and are stored in the RAM or on a hard drive as a .wav file. (If that file is then compressed, it can become an .mp3.)
