How to properly clean and season a cast iron grill pan?

I used to wash it… until it starting rusting.. Am i not supposed to use water on it

You must never , ever clean it with any soap EVER ! Just clean the majority of what you cooked with a paper towel . Next with a damp rag wipe out the inside and outside and dry it immediately . As for the rest of the information you need . I searched back in my answers to retrieve what has been a repeated best answer for proper curing . It is a story from my youth , but is as true as the words I give you now .

Many years ago my father pulled a cast iron dutch oven from a river after a flood . It had been there for some time and was quite pitted and rusted . My mother steel wooled and brillo padded it until there was not trace of topical rust . She then thoroughly dried it with a cotton cloth . She then lined the bottom of the oven with foil and place a large baking pan on the bottom rack . With lard she coated the inside and outside of the cast iron . Then baked it at 325 degrees F. until the lard had been cooked off . She cooled the pot and repeated this several times always catching the lard that dripped off and reapplying it . Lard reacts best with the carbon steel that makes up what we call cast iron and is aide decamp to the blackening of it . Oil and butter will not cure it as well or completely and rust will resume it’s reached destruction of the pot if not used continuously when cured with butter and oil . It must be an animal fat . That is what my Great Grandmother would tell you if she were alive .
I have cast iron pans from my Great Grandmother to this day and I use them continuously . I still have that Dutch oven my mother cleaned and cured . Sometimes it is months between uses , but it never gets a spot of rust . When i use it , not even mac and cheese stick to it !
