I need only one or two parts, each unique, for a bicycle project I am doing. Will a machine shop make only one part for me, or do they require large quantity orders? Will it be expensive?

It probably will be expensive, especially if made by hand. You will end up paying hourly charges. Your best bet is to google “rapid prototyping” and have drawings/sketches/measurements of the part ready to send to them. They will gladly make the part, and probably at a lower price. It will depend on the material, of course.
