She has written for the Los Angeles Times Syndicate, Williams-Sonoma Taste, and Food & Wine and has published thirteen books on cooking and gardening. Her first book, American Charcuterie: Recipes from Pig-by-the-Tail, was nominated for the James Beard Cookbook of the Year award in 1986. Victoria resides in Oakland, California.

Are you bored of cooking the same recipes? Or simply are feeling bland with your cooking? Quality pork is definately a good red meat and will bring colour and taste to any dish.

Sausages are marvellous as there are a thousand and one ways to cook them. If you do not fancy the plain sausages you can always choose sausages with spices or herbs. The selection of sausages will totally differ from country to country, but they were originally born in Europe.

The English culture contains a lot of pork and sausages. British sausages are prepared with fine pork, and either cereals, herbs or spices. In England sausages are called bangers since the skin is very taut. English people commonly serve their bangers with potato mash. In addition they are part of the famous English breakfast. It is thought that in England there are over 470 different types of sausages, for example there are those traditional ones and others with a European twist like the Spanish Chorizo. Another fine example is the sausage roll this is made of puff pastry and it is sold in many local bakeries.

I am now going to propose some pork recipes. A peas and ham broth will take you some time to cook but for sure it will be amazing. The recipe involves rehydrating the peas around 2 hours. Then you will have to place the gammon in a pan with the peas and the other ingredients. After boiling you need to cook it for one and a half to two hours approximately. A lovely barbeque inspiration is to place your sausages on a skewer. A further incredible recipe is preparing your spaghetti with pork sausages with a creamy sauce. Add chilli in a sauce pan along with some nicely sliced sausages and cook through with the pasta. To make the cabonara sauce simply add an egg and cream, voila!
