Corn’s History In Mexico

Corn, or maize, is a native plant to Mexico. This grain has become an important part of human history. It started out as a wild grass that produced seed heads that were good to eat. As people developed their cultivation skills, they learned to hybridize these grasses until they grew larger seed heads that grew larger kernels full of nutrition.

 

The Aztecs considered corn to be a gift from the gods. They used corn in many of their rituals. As a result of this, the Spanish conquistadors did not take to corn right away. It was linked to paganism in their minds, so they considered the eating of this grain unchristian. Maize, which was adapted from the native name, mahiz, was also associated with a disease called pellagra, which is caused by a lack of niacin. Maize does not contain niacin, only tryptophan. Tryptophan can be converted to niacin with the help of other vegetables in the diet. Eventually, the Europeans accepted corn and soon began growing it back in the Old World.

 

Corn has long been used in many Mexican recipes like tortillas and tamales. For generations, it has been a part of life. The people have sown the seed, cultivated the plants, harvested the grain and used it for sustenance.

 

Mexican food has enjoyed the benefits of corn since ancient times. Mayan legend has it that people were created from corn meal by the gods. Their entire culture utilized corn in every aspect of daily life. Once corn was grown in Europe, it quickly grew in popularity among the people as a new food source.

 

Corn has played an important role throughout Mexican food history. Kernels were cooked in alkaline water to soften the hulls for removal. Once the kernels had expanded, they were ground into a coarse meal that was used to make breads, soups, and puddings. Corn tortillas became a staple throughout most of Mexico, being eaten at almost every meal. Remnants of corn have been found in archeological digs dating back to 6700 BC. It is interesting that the two main food sources in Mexico, corn and beans, happen to complement each other with their amino acids. They pair up beautifully, providing everything the people needed.

 

Eventually, corn spread to the United States. It was planted by the Native Americans as a supplemental food source. In Mexico, many different varieties were developed and grown from the lowlands well up into the mountains. Today, many of these heirloom varieties are still cultivated.

 

Hominy, the result of soaking corn in liquid, is very popular. It adds a chewy texture to many traditional Mexican recipes. It is also ground into masa, which is then dried carefully and ground again into a very fine flour known as masa harina. It is this flour that is used to make tamales and corn tortillas. Cooks also use it to thicken sauces like mole.

 

There are several types of corn, but dent corn is the one that is grown most in Mexico. In the United States, dent corn is used for animal feed and industrial uses. Sweet corn is the vegetable everyone enjoys eating off the cob in the summer. Popcorn is another variation that appeared.
