Will a 420 Stainless Steel blade, sharpen easily & hold the edge well?
The reason I ask is, I once received a knife, I’m not sure what the blade was, other than Stainless, any way it was, excuse my French … Pure Crap!
Not really. 420 is low carbon steel and is used in entry level knives. Composition here – http://zknives.com/knives/steels/420.shtml
Main benefit is corrosion resistance. Even with best heat treatment it won’t hold the edge as bunch of other steels. If you need to use a knife in highly corrosive or humid environment, then it might outperform carbon steels, or high carbon stainless ones, but other than that not much to it.
