How can I use rice flour instead of AP wheat flour for a pie crust?

My brother is alergic to gluten and I want to make him a pecan pie, can I substitute rice flour for the ap flour? I have rice and a wheat grinder to make my own rice flour, is there any recipe out there that can help me?

Absolutely!

No professional chef would use all-purpose flour in a pie crust or other pastry. They would use pastry (aka cake) flour, which is softer and have a far lower gluten content. You can substitute any non-wheat flour for all-purpose flour in pastries or quick breads, so long as you don’t object to the taste. Rice flour has very little taste, so it is a good substitute.

My concern is whether you are going to be able to get a fine, even grind from you grinder. If the result is gritty, you’re not getting a fine enough grind, and may not be happy with the result. When you’re making pastries, you’re not using a bunch of liquid and taking the time for the flour to absorb the liquid. It might be worth it to buy rice flour, which is increasingly readily available.

To substitute, use any recipe calling for all-purpose flour, and substitute 1 cup 2 tablespoons of rice flour for the all-purpose. This is necessary because a proper grind of rice flour, after sifting, is lighter than all purpose.

Something else you might want to try – waffles, pancakes, biscuits or muffins made from bean (e.g. pintos) flour. Pinto bean biscuits with sharp cheese and a little bit of chili powder go good with beef stew. (In my opinion – your mileage may vary.)
